Teriyaki Salmon with Shaved Carrot & Sesame Egg Noodles
Ingredients:
150g Salmon Fillet
1 Tbsp Ginger
1 Red Chilli
1 Carrot
3 Tbsp Tamari
Lime
160 g Egg noodles
2 Tbsp Honey
1 Tbsp Sesame Oil
1 Tbsp Olive Oil
Method:
Peel and slice the ginger, chop the chilli, grate the zest of the lime and combine with the juice of the lime in a small bowl.
Peel the carrot, using the peeler, shave the carrot into strips and set aside
Heat a pan over a medium heat and fry the salmon skin side down in a little oil. Cook 2-3 minutes on each side
Cook the noodles according to the package instruction. Add the shaved carrot top the noodles for the last minute of cooking. Strain the noodles and add the sesame oil.
Make the teriyaki sauce. Heat some oil in the pan used for the fish. Fry the ginger and chilli. Add the zest and juice of lime and pour the soy sauce. Add the honey and cook for 1 minute until reduced and sticky. Add the salmon to the pan for 1 minute. Add the noodles and mix thoroughly.
